Rasiya

You can prepare a delicious rice pudding, Rasiya, using rice, milk and jaggery. Garnishing the pudding with dry fruits makes this sweet delicacy even more flavourful. This dish is prepared during the auspicious Chhat Puja celebrated in the states of Bihar and Jharkhand. This carbohydrate-calcium rich sweet is ideal to relish.

    Ingredients to make Rasiya:

    3 tbsp rice, 1 litre milk, 1 tsp ghee, ½ tsp cardamom powder, ¾ cup jaggery, 2-3 almonds, 2-3 cashew nuts, 2-3 pistachios, 2-3 raisins

    Steps to make Rasiya:

    1. Wash the rice. In a kadai, add ½ tsp ghee and dry roast the washed rice. Coarsely grind and keep aside.

    2. Add the remaining ghee and saute the chopped dry fruits.

    3. In a vessel, pour milk and bring to a boil.

    4. Add rice and stir in between till the rice gets half cooked.

    5. Add the crushed jaggery and continue cooking till all of it gets cooked.

    6. Add cardamom powder and saute dry fruits.

    Hot and yummy Rasiya is ready to be served and enjoyed.
