Rava Khichdi is a typical but very healthy south Indian dish made of rava/sooji. You can add some vegetables making it more delicous and nutritious. This dish is rich in iron, vitamin A and C, as well as potassium.

1 cup - rawa/sooji, 3/4th cup - finely chpped mixed vegetable - carrot/beans/capcisum/peas, 3-4 tbsp - ghee, ½ tsp - tumeric, salt and ginger - as per taste, 3 cups water
1. Take a pan, and start roasting the rawa on low flame.
2. Keep stirring it oten allowing it not to burn and once the rawa starts exhibiting a nice aroma and turn slightly brown then turn the flame off.
3. In the same pan heat some ghee and once its hot throw in some mustard seeds.
4. Then add some ginger and stir well.
5. Next add the mixed vegetable and sprinkle some salt. Then add 3 cups of water and bring it to boil.
6. Now start adding the sauted rawa it parts not allowing any formation of lumps.
7. Cover the pan for around 2-3 minutes and keep the flame on low heat.
Then remove the lid and your khichdi is ready to be served!
