The red rice gets its rich colour from an antioxidant called anthocyanins, which are also found in deep purple or reddish fruits and vegetables. The compound is believed to have properties that can reduce inflammation, allergy, prevent risks of cancer and help in weight management. The manganese present in it helps in strengthening metabolism, while magnesium helps in migraine and lowers blood pressure. Along with calcium, magnesium helps in maintaining healthy bones and teeth. Red Rice Payasam is a delicious sweet dish, which comes with all the goodness of red rice. The unique nutty flavor adds on to its taste making it irresistible.

Red rice-1 cup, milk-6 cups, water-1 cup, cashew -few, golden raisins-few, sugar-½ cup, green cardamom powder-½ tsp and saffron strands-few
1. Wash and soak red rice in water for 15 minutes. Drain the water and keep it aside.
2. In a thick bottomed vessel or kadai, b oil 3 cup of milk and 1 cup of water.
3. Add soaked red rice, let it cook on low heat till rice is done.
4. Once the red rice is soft but firm in shape, a dd sugar and the 3 more cups of milk.
5. Let it simmer till it reduces to half the quantity. Keep stirring in between and scrap the malai or cream at the sides of the vessel and add it to the boiling payasam.
6. The whole process of making this payasam takes about 30 to 45 minutes on slow flame.
7. When it thickens and looks creamy, a dd cardamom powder, roasted and chopped cashew and golden raisins.
Mix well. Remove from flame and garnish with saffron strands. Serve the Red Rice Payasam warm or chilled.
