    Ingredients to make Ridge Gourd Upkari:

    2 cups ridge gourd cubes, 1 tbsp oil, 1 tsp mustard seeds, 6 to 8 curry leaves, 1/4 tsp asafoetida, ½ cup chopped onions, salt to taste, 1/4 cup grated coconut, 1/4 tsp turmeric powder.

    Steps to make Ridge Gourd Upkari:

    1. Heat oil, add the mustard seeds, curry leaves and asafoetida and sauté on a medium flame for 30 seconds.

    2. Add the onions and sauté on a medium flame for 1 minute.

    3. Add the turai, salt and ¼ cup of water, cover and cook on a medium flame for 6-7 minutes, stirring occasionally.

    4. Add the coconut and turmeric powder, and cook on a medium flame for 1 minute. Serve hot.
