Sahjan ki Sabzi

Drumstick is a rich source of vitamin C. It also has valuable carbohydrates and protein. Along with potato and spices, you can prepare a delicious side dish called Sahjan ki Sabzi that goes excellent with chapatis or steamed rice. To add thickness to the gravy, you can use poppy seeds which has vital minerals like iron and calcium.

    Ingredients to make Sahjan ki Sabzi:

    4 drumsticks, 1 potato, 2 tsp poppy seeds, 1 tsp mustard seeds, 1 tsp coriander powder, ¼ tsp pepper powder, ¼ tsp turmeric powder, 2 tsp oil, 2 green chillies, 2 tomatoes, 1 onion, water as required, salt as required

    Steps to make Sahjan Ki Sabzi:

    1. Cut each drumstick into 3-4 pieces.

    2. Cut the potato into cubes.

    3. Soak poppy seeds in little water for 10 minutes. Grind to a fine paste.

    4. Make a paste of tomatoes and green chillies.

    5. In a vessel, boil water and add the drumstick and potato pieces. Add little salt and turmeric too. Simmer and cook till tender.

    6. In a kadai, add oil. Once the oil is warm, add mustard seeds

    7. As the mustard seeds crackle, put the finely chopped onion, and fry till golden brown. Add the poppy seeds paste and saute on medium flame for about 5 minutes.

    8. Add the tomato green chilli paste. Add the dry spices and mix the entire mixture well. Add salt too. Cook for 3-4 minutes on medium flame.

    9. Add 1 cup of water and give a good mix. As the gravy starts to boil, transfer the cooked drumsticks and potato cubes.

    10. Stir well and cook for 2-3 minutes.

    Delicious Sahjan Ki Sabzi is ready. Serve with chapatis or steamed rice. Enjoy!
