Saragva Nu Lot Valu Shaak

This is a recipe which your kiddo will not resist as it has a delicious taste and wonderful aroma. Drumstick leaves and pods are loaded with B complex vitamins (such as niacin, riboflavin, folic acid and pyridoxine), which are said to play a vital role in digestion. It also contains high levels of vitamin C. Gram flour includes high protein content and can be easily consumed by vegetarians to fulfil their protein needs.

    Ingredients to make Saragva Nu Lot Valu Shaak:

    2 drumsticks, 1 tbsp oil, 3 curry leaves, ½ tsp sesame seeds,1/4 tsp cumin seeds,1/4 tsp mustard seeds,½ tsp red chilli powder, ½ tsp turmeric powder, 1/4 tsp asafoetida,½ cup curd, ½ cup gram flour and salt to taste

    Steps to make Saragva Nu Lot Valu Shaak:

    1. Wash and cut the drumsticks in to 3 inch pieces and boil them in water in pressure cooker for 1 whistle. Alternatively you can also steam them.

    2. Make yogurt paste by combining yogurt with gram flour and add all the spices like turmeric, asafoetida, red chili powder and salt.

    3. Add 1.5 cup water and beat it well using a beater to make sure there are no lumps left.

    4. Heat little oil in a wok and roast yogurt mixture. Stir till mixture thickens.

    5. Add boiled drumsticks to mixture. Cover and cook for few minutes. Adjust taste with salt.

    6. Stir. Add seasoning / tadka made of hot oil and fried mustard seeds, cumin seeds, sesame seeds and curry leaves. Garnish with coriander leaves.

    Serve Saragva (Shing) Nu Lotvalu Shaak along with phulka. It tastes best when served with Bhakhri.
