Ingredients to make Scrambled Surprise Egg Decker:

For the hash browns: 2 boiled and peeled potatoes, oil for frying, salt to taste

For the creamed spinach: Oil for frying, 1 onion minced, 1 garlic clove minced, 2 bunches spinach, steamed and chopped, salt to taste, ¼ cup fresh cream

For the scrambled eggs: 2 eggs, salt to taste, oil for frying

Steps to make Scrambled Surprise Egg Decker:

1. Grate the potatoes and add salt.

2. Form small patties from the potato mixture and fry till golden and crisp. Keep aside.

3. In a separate pan, heat oil and sauté onion and garlic for two minutes. Add chopped spinach, salt, and fresh cream. Cook for 3-4 minutes and keep aside.

4. Beat the eggs with salt and fry in a hot pan, stirring to scramble them.

5. To assemble, stack the potato patties, creamed spinach and scrambled eggs and serve.
