You can make a delicious and filling snack, Shahi Raj-Kachori using healthy ingredients. This snack has valuable carbohydrates and protein and is flavoured with dates, tamarind chutney, which is a good source of fibre and vitamin B, C, and K. This popular royal dish from Rajasthan is ideal for a perfect evening snack.

2 cups wheat flour, 1 cup Bengal gram flour, 1 cup semolina, ½ cup moath beans, ½ cup brown chick peas, ½ cup green gram, 2 boiled potatoes, 1.5 cup yoghurt, 1 tsp roasted cumin powder, 1 tsp chilli powder, ¼ cup sev, khajur imli chutney as per taste, salt as per taste, oil for frying
1. Soak the moath beans, brown chick peas and green gram overnight. Pressure cook the pulses for 5-7 whistles.
2. For making the kachori, add wheat flour, Bengal gram flour, semolina and salt in a mixing bowl. Add little water and knead the flour mixture to a semi soft dough.
3. Heat oil in a kadai. Take small portions from the dough and roll each to the size of a poori.
4. Fry them in hot oil till they turn crisp and golden brown. Remove and keep them on a plate.
5. For making the filling, take all the boiled pulses, diced boiled potatoes and salt in a bowl. Mix well. The filling is ready.
6. Make a small depression at the centre of the kachori. Put one portion of the filling.
7. On top, put 2 tsp curd, khajur imli chutney, a pinch of cumin and red chili powder.
8. Sprinkle some sev on top.
Yummy sweet-tangy filling Shahi Raj-Kachori is all ready to be relished. Devour like no tomorrow!
