    Ingredients to make Simmered Potatoes:

    2 potatoes large, 2 tbsp sugar, 2 tomatoes pureed, 1 tbsp ghee, salt, 1 cup water

    Steps to make Simmered Potatoes:

    1. Cook unpeeled potatoes in boiling water until partially cooked. Cool them and then slice potatoes into cubes.

    2. Bring pureed tomatoes, water to simmer in large skillet over medium heat. Add ghee, sugar, salt.

    3. Reduce heat to low, add potatoes, then cover and simmer over low heat until tender and liquid is reduced.

    Season with pepper and coriander leaves.
