Karji Kai is an authentic Indian snack, which is hard on the outside but soft inside, making it extremely delicious. Children are known to have a sweet tooth and so they are usually preferred by them. Let us try to explore the best way to prepare them and make your muchkin happy. Oh, and these are loaded with protein, healthy carbs, and protein.

Maida - 1 cup, semolina - 1/4th cup, grated coconut - ½ cup, gram flour - 1/3rd cup, ghee - 4-5 tbsp, almonds & raisins - 2-3 tsp, poppy seeds - 1 tbsp, pinch of salt
1. In a big bowl take maida, semolina, and a pinch of salt, then add hot oil or ghee. The oil/ghee should be so hot that it should form bubbles when poured on the maida. Now start mixing the ingredients well.
2. Now add some milk and water so as to make a stiff dough. Knead well and cover it with white cloth and keep it aside for atleast 20 minutes.
3. In the meantime you can make the filling of the Karji Kayi - so take the grated coconut, sugar, gram flour, and grinded poppy seeds, you can also add almonds and raisins. Mix these items properly.
4. Now take the dough and divide the balls in lemon size. Now with the help of rolling pin make small disc like round shapes and dust some dry maida if required. Try to make it as thin as possible.
5. Now take around 1 tsp of the filling and keep it on the centre. Apply little water on the edges of the disc and close the disc using the water as the glue to close the edges properly.
6. You can take a fork and give slight impressions on the edges. Repeat the same process with the remaining balls and complete the entire process.
7. Just as you are preparing them, heat oil in a pan so that by the time you finish making the gujiyas the oil is hot enough and the gujiyas can be fried.
8. Drop them 1-2 in a time and splash some oil on all sides of the gujiya and let it fry in medium flame untill it starts turning golden brown in colour.
9. Now take them and drain the excess oil in a tissue paper.
Delicious hot and Soft Karji Kayi is ready to be served.. Happy Snacking
