1½ tsp. agar agar powder, 2 cups soy milk, 1½ cup water, 2 pandan leaf knotted, 1½ cup castor sugar
1. Mix well the agar agar powder in ½ cup warm water and whisk till the agar agar powder dissolves completely and keep aside.
2. In a pot boil 1 cup water and tear the knotted pandan leaf a little in order to extract most fragrance out of it. Cover with lid and bring to a boil for 10 minutes and switch off the flame. Wait for 3 minutes so that the flavour is infused and remove the pandan leaf.
3. Heat soya milk and add castor sugar and stir constantly for the sugar to dissolve, mix in the agar agar and pandan mixture to soya milk and bring it full rolling boil by stirring occasionally.
4. Simmer for 1 minute to boil and remove from heat. Transfer with a ladle to the pudding/ jelly moulds or to a flat bow. For smooth surface, skim off bubbles from the top. Leave for 2 hours to set.
