This is a tasty jam with the hint of coconut to accompany your kiddo's plate when he's ready to eat his meal.

Ingredients to make Srikaya Jam:

3 eggs, 100 gm sugar, 250 ml thick coconut milk, 3-4 knotted screw pine leaves

Steps to make Srikaya Jam:

1. Set up a double boiler by filling up a pot with 3/4 of water and bring it to a boil.

2. Once it gets boiled turn the flame to low/medium and then let the water simmer at the bottom of the pot.

3. In a large mixing bowl add eggs and sugar and beat them together till the sugar is completely dissolved.

4. Now add coconut milk into this mixture and keep whisking.

5. Place this bowl on the top of the double boiler with hot water.

6. Wash the screw pine leaves and knot them up together.

7. Now add them into the mixture and keep stirring with a spatula.

8. Keep scraping the sides of the mixture with the spatula and pour it on the screw pine leaves.

9. Let the mixture turn sticky and thick and to make sure that its ready you can draw a line with spatula in the middle.

10. If that line stays apart for even a second then your mixture is ready.

11. Let it thicken down and then take it off from the heat.

12.Take the screw pine leaves out and squeeze them to take out extra mixture from them.

Let it cool and this will thicken it further. Fill it in a glass jar and place it in the fridge for a month.
