You can make a delicious Stuffed Moong Dal and Potato Rolls using moong dal and potatoes. This protein-carbohydrate rich dish is a perfect breakfast delicacy and is very filling for your child and a healthy start to the day.

½ cup green moong dal, 2 tbsp curd, 3 tsp green chiles, 1 tbsp besan, a pinch of asafoetida, a pinch of baking powder, salt as required, 2 potatoes, 2 tsp oil, ½ tsp cumin seeds, 1 onion, 5-6 sprigs of coriander leaves, ½ tsp red chili powder, 1 tsp dried mango powder.
1. Soak the moong dal for about 3 hours. Drain the water and grind to a smooth paste along with 2 green chiles, besan, and curd.
2. Transfer the mixture into a bowl. Add the baking powder and mix. Keep aside.
3. Boil the potatoes.
4. In a kadai, add oil. Once the oil is warm, add the hing and cumin seeds. Once cumin seeds change light colour, add the finely chopped onions and green chiles. Saute for 3-5 minutes.
5. Add the boiled mashed potatoes, chili powder, and amchur powder. Add salt and finely chopped coriander leaves. Mix very well.
6. On a hot tawa, pour one laddle of the moong dal batter and spread it like a dosa.
7. Spread a portion of the potato filling evenly on the chilla and cook till the chilla is golden crisp.
8. Roll the Stuffed Moong Dal and Potato Rolls and remove.
Cut into four 3-4 small rolls. Serve hot. Enjoy!
