Using potalas(sponge gourd/parvals) and potato, you can make delicious stuffed potala bhaja. This side dish tastes yum and is rich in vitamins and minerals like vitamin A, C, magnesium and also fibre and carbohydrates.

6 potalas, 1 potato, ½ tsp turmeric, 1 tsp cumin seeds, 2 tsp oil, 1 tsp coriander powder, 2 tsp urad dal, 1 tsp chili powder, 1 onion
1. Boil the potato and mash it.
2. Wash and peel the potalas. Cut along one side and remove all the seeds.
3. In a kadai, add oil. Once the oil is warm, put cumin seeds and urad dal.
4. As it turns light in colour, add the finely chopped onion and saute for 3-4 minutes.
5. Add the spices and saute for a minute.
6. Add the mashed potato and give a good mix.The stuffing for the potalas is ready.
7. Fill the above stuffing in the hollow of the potalas.
8. In a pan, add little oil. Place the stuffed potalas one by one. Cover and cook on medium flame till the potalas turn tender. Keep checking in between and turn the potalas till its cooked well.
Hot and tasty Stuffed Potala Bhaja is ready to be served with phulkas or steamed rice.
