This is a simple yet delicious dish. Lemon juice and coriander added towards the end enhances the flavor of this dish. Potatoes are part of a child's healthy diet, providing fuel, carbohydrates, fiber and essential vitamins and minerals.

1 kilo potatoes, 1 tsp ground black pepper, 2 tsp sugar, 2 tbsp lemon juice, 3 tbsp chopped coriander, 1/4 tspn turmeric, 3 tbsp concentrated tomato purée, 15 whole cashew nuts, 3 tsp ginger, minced, 2½ tsp green chili, ¼ tsp asafoetida (optional), 6 curry leaves, 2 tsp whole cumin seeds, 3 tbsp ghee and salt to taste
1. Peel and dice the potatoes in cubes and boil them in salt water.
2. Heat ghee. Roast cumin seeds, ginger, chillies, curry leaves, asafoetida, and cashew nuts. Saute for few minutes till the nuts are brown.
3. Add tomato puree, turmeric and cook for 2-3 minutes.
4. Add boiled potatoes. Mix it.
5. You can also mash few pieces of potatoes to adjust the consistency.
6. Cook on low heat for 10 minutes till all the water is absorbed. Stir in between.
7. Adjust the taste with salt, sugar, lemon and black pepper. Garnish with coriander leaves.
Serve Sukha Batata Nu Shaak with hot puris, paranthas, or theplas.
