Gajar ka Halwa is a common sweetdish made in North Indian households. Not only this dish is a delight to the taste buds, but also brings with it the goodness of carrots.. Carrots are known to improve vision, prevent cancer and infections and is good for teeth and gums.

Ingredients: Carrots (7-8 juicy ones), milk (3-4 cups), sugar (11-12 tablespoons), ghee (3-4 tablespoons), half a cups of sliced almonds and raisins, 1 tablespoon of cardamom powder.
Steps:
1. Clean and grate the carrots and keep them aside.
2. In a vessel, bring the milk to a boil and add the carrots. Keep stirring and let the carrots cook in the milk.
3. When the milk has reduced by about 75 per cent, add the sugar, cardamom powder and ghee.
4. Simmer till all the milk has evaporated.
Cool and serve. This dish does take a lot of patience but rest assured, the effort is worth the while. Go ahead and try it today!
