Tamdi Bhaji is a simple and healthy Goan preparation with red Amaranth leaves. Serve this dish as it is a good source of protein, vitamins, and minerals.

1 cup Tambdi/Lal bhaji (Rajgira/Amaranth leaves washed, drained, and chopped finely), 1 medium onion chopped, 1 chopped green chili, 4 chopped garlic cloves, ½ cup grated coconut, 2 tsp. oil, ¼ tsp. turmeric powder, water as required, salt to taste
1. In a pan, heat 2 tsp. oil and add the chopped onions, green chilli and garlic.
2. Stir and sauté till the onions are translucent. Add turmeric powder and stir.
3. Add the amaranth leaves, salt and stir well and cover with a lid and cook on a low flame.
4. Keep stirring in between and add water if required. When the leaves are cooked, add the grated coconut and cook for about 10 minutes.
5. There should be no water in the dish, if it there then evaporate the excess water by simmering without the lid.
Serve Tambdi Bhaji as a side dish with chapatis, bread, or dal-rice.
