Cashews work as great health boosters and a good source of monounsaturated fats and proteins. Moreover, cashews are loaded with vitamins and minerals, which is also another reason for consuming them. Tangy Cashew Curry is a nutritious blend of tangy tomatoes rich in fibers. It can be served with rice or chappati. The aroma and taste of this curry has the capacity to attract every single person in your home.

Cashew-2 cup, butter-2 tbsp, riped red tomatoes-3 small, cream-½ cup, sugar-1 tbsp, kasuri methi-1/4 cup, salt-to taste, coriander leaves-few and red chillies-few
1. Wash and chop riped tomatoes.
2. Heat butter in a colander and add red chilies. Add and roast cashews till golden brown.
3. Add chopped tomatoes, methi, salt and sugar. Stir well and cook for 5minutes. Add litthe water and cook for next 10 minutes
4. Add cream and mix well.
Turn off the flame and garnish with minced coriander leaves. Serve hot with chapati or rice.
