250 ml milk, 3 eggs beaten, 125g flour, oil, for frying
1. Whisk together the milk, eggs, and flour till smooth. Leave to rest for 15 minutes.
2. Place a non-stick pan over low heat and drizzle in a little oil.
3. Add a small ladle of pancake batter and swirl the pan carefully to spread the batter all over the base.
4. Cook for 1-2 minutes or until it starts to come away from the sides and is golden underneath.
5. Flip the pancake over till cooked through and repeat until the batter is finished. Serve immediately.
