Tchoek Vangun Hachi

This is a popular dish of Kashmir that is a main course dish and has a very strong flavor. It is very healthy for kids and prepared in such a unique way that kids will love to have it again and again.

    Ingredients to make Tchoek Vangun Hachi:

    50 gms sun dried eggplant pieces, 20 gms of tamarind soaked in water, 2 tbsp of mustard oil, a pinch of hing, 2 tbsp chili powder, 2 tsp sonth powder, 1 tbsp fennel powder, and salt as required.

    Steps To Make Tchoek Vangun Hachi:

    1. Take some sun dried eggplant slices and boil them for 10 minutes. Drain them completely and then keep aside.

    2. Extract the pulp of tamarind and keep it aside too.

    3. Now take some oil in a pan and heat it up. Stir fry eggplant slices with hing for 5 minutes.

    4. Add the spices and then roast them with eggplant strips for few minutes. Add salt and tamarind.

    5. Now, add a little water and then simmer for 15 minutes.

    Serve this dish with rice or roti.
