Thani Kootu is a dish you can try if you are lazy on some days or you don’t have your stock of vegetables. It can be prepared in a jiffy with very less ingredients.

2 tsp coriander (dhania) leaves, 2 tsp besan (Bengal gram flour), 8 red chiles, 2 tsp coconut, a pinch asafoetida (hing), 2 cups tamarind (imli) water, a piece of jaggery (gur)
1. Extract and boil tamarind for 10 minutes.
2. Roast chili, dhaniya, besan, coconut in a little oil and grind to paste and put in the syrup.
3. Let it boil for some time.
4. After 2 boils add jaggery. allow it to thicken.
5. Add some fried coconut.
6. Crackle mustard and besan.
Serve the Kootu hot!
