Crispy, crunchy, and sweet in taste, Thekua is a delectable sweet dish from Bihar. A deep fried sweet snack item is high in calories and can be preserved for a week or so.

500 gm wheat flour, 2 tbsp ghee, 1 cup sugar, 2 tbsp milk, ½ cup dessicated coconut, 1 tsp fennel seeds, 1 tsp cardamom powder, oil for frying, water as needed
1. Boil 2 cups of water in a deep bottomed pan. Add sugar to it ,stir till it melts. Add milk and let it boil. Once the dirt comes upward, remove and strain the syrup in bowl.
2. Add ghee in sugar syrup and stir well. Allow the syrup to cool at room temperature
3. Now, take wheat flour, fennel seeds, dessicated coconut, and cardamom powder in a deep bowl. Add sugar syrup in batches and knead a hard and smooth dough.
4. Make small balls of the dough and flatten them with your hands.
5. Heat oil in a skillet and deep fry flattened thekuas till golden brown from both sides.
Cool them at room temperature and store in air tight container for later use.
