Til Rewari (jaggery) is a very healthy homemade dish rich in calcium, which is good for your kid's bones and protein as well.

1½ cups roasted sesame seeds, 3/4 cup jaggery,1/4 cup water, ½ tbsp rose essence or kewra essence, 1 tsp eliachi powder, ½ tsp salt,1 tbsp ghee, 1/4 cup roasted sesame seeds
1. Add sesame seeds to a heavy bottomed pan. Dry roast for 2-3 minutes on a medium low flame. Keep stirring continuously to prevent burning of the seeds. Set it aside.
2. Combine sugar and water in a pan. Add salt.
3. Add kewra essence and eliachi powder. Mix until well blended. Cook this mixture on a medium flame.
4. Drop few drops of jaggery syrup in that ice cold water. Carefully remove syrup from water. Texture of the syrup will be gooey and rubbery. Layer a tray with silicone mat and pour jaggery syrup over it. Allow it to cool for 1 minute.
5. Use a spoon to peel sugar around the edges. Work with a spoon and gather all the syrup in the center. Grease your hands with ghee and start kneading the syrup.Stretch, fold and knead.
6. After a good kneading of 30-40 minutes or maybe longer, gur syrup will change color from pale yellow to creamy white.
7. Add roasted sesame seeds on the silicone mat. Add kneaded gur dough on top.Stretch and knead again.
8. Jaggery dough is ready to be shaped. Cut and divide the dough into equal portions. Shape and flatten the dough.
Roll flatten balls in roasted sesame seeds. Your kid will enjoy this very much.
