    Ingredients to make Tom-Kha-Gai:

    2 boneless chicken breast sliced to your desired size, 1 cup shiitake mushrooms, 6 cups unsweetened coconut milk, 3 stalks lemongrass, 1 big white onion, 1 stalk green onion, 1 tbsp. grape seed oil, 2 tsp. Thai red curry paste (or curry powder), ½ cup bean thread noodles, 1 tsp. minced ginger, 6 lime leaves, 1 cup chicken stock, 1 tbsp. lime juice, ¼ cup fish sauce, 2 tbsp. chopped cilantro, 5-6 tarragon leaves, salt to taste

    Steps to make Tom-Kha-Gai:

    1. Slice off the bottoms of the lemon grass, wash and slice it diagonally into about 1 inch strips to release its amazing fragrance.

    2. Heat a medium sized pan and add about 3 cups of the coconut milk and toss in lemongrass and tarragon.

    3. Just before the coconut milk begins to boil add the chicken chunks and add the remaining 3 cups coconut milk, simmer to medium low flame, add the red chilli powder.

    4. Give a quick stir and add the mushrooms, take care not to boil the coconut milk maintain a good low heat and stir gently,

    5. Add the onions, ginger, slightly crushed lime leaves, bean thread noodles and stir gently. Add salt and stir and cook in low flame itself for 5-10 minutes or until the chicken and other ingredients are well cooked and switch off the flame and add the lime juice, give a gentle stir and garnish with cilantro.

    Dish the Tom-Kha-Gai soup into a bowl and serve it with a plate of hot fresh steamed rice and relish every spoon of it.
