Using tomatoes and beetroot, both of which are a good source of vitamin A, C and K, and minerals like potassium and manganese, you can prepare a tangy sweet jam called Tomato Beetroot Jam. Flavour this jam with sugar, which enhances the taste.

8 tomatoes, 2 beetroots, 1.5 cups sugar
1. Blanch the tomatoes by adding them to boiling water and immerse them for about 5 mins till it turns soft. Plunge them in cold water and then remove the skin
2. Grind the tomatoes to a smooth paste and strain it to remove the seeds.
3. In a deep pan or kadai, add the tomato puree and bring to a boil on medium flame.
4. Grate the beets and add to the boiling tomato puree. Keep cooking till the beets get cooked.
5. Add sugar and stir well. Cook on medium flame for about 40 mins till the jam thickens.
6. The right consistency would be when the jam is easily spreadable when you take a drop of cooled jam.
Transfer the jam soon to a dry jar and close it when the jam cools down.
