This recipe is a simple and no fuss indian curry that goes well with rice or roti. Lady finger contains good amount of iron and folates which helps in maintaining the blood haemoglobin count as well as preventing from the iron deficiency anaemia.

400 gm lady finger, 100 gm tomato, 100 gm onion, 3 sticks (curry leaves), 2 green chili, 15 clove garlic, 1 tsp turmeric powder, 1 tsp mustard seed, 1 tsp aniseed, 2 tsp urad dal, a pinch of asfoetida, 3 tbsp refined Oil and Salt as per taste
1. Wash the lady finger and cut it into 1 inch long pieces removing the stalk from both ends.
2. Wash the tomatoes and chop in small pieces and make thin slices of onion. Slit the green chilies.
3. Heat oil in a pan and add asfoetida, garlic. When garlic turns golden brown add mustard seed, aniseeds, urad dal.
4. Let it splutter and then add onion, green chili and curry leaves.
5. Fry it till the onion turns transparent and add tomato. When cooked add the ladies finger pieces.
6. Add turmeric powder and salt to the mixture, stir it and cover it.
7. Cook it till the ladies finger is well cooked.
Serve hot with chapati. Your kiddo will relish eating them for sure.
