Tomato Chutney

Healthy tomato chutney is a very healthy side dish whose sweet and spicy taste attracts every single person who has tasted it at least once.

    Ingredients to make Tomato Chutney:

    Tomatoes-4 large, jaggery-3 tsb, peanuts - few , grated Coconut-1/4 cup, green Chillies-1, oil-1 tsb, coriander Leaves-few, curry Leaves-few and Mustard Seeds-1 tsp.

    Steps to make Tomato Chutney:

    1. Heat the oil in a saucepan and add mustard seeds. Let it splutter and add sliced tomatoes, curry leaves and green chili.

    2. Cover the pan after mixture comes to boil and let it cook for 6 to 7 minutes on low medium heat; tomatoes should be soft but still be in slices. Add grated coconut.

    3. Mix jaggery with 2 teaspoons of water and add to the tomatoes. Let chutney cook for another minute. Stir in between.

    Turn off the flame and garnish with minced coriander leaves. Serve with rice or chapati.
