Tomato Gojju Rice

Tomato Gojju Rice is a yummy delicacy of Karnataka. It is made using tomatoes, which has vitamins and minerals, jaggery and rice which have carbohydrates. Toor dal when added, provides the necessary protein. A one pot meal which has all the nutrients and tastes awesome.

    Ingredients to make Tomato Gojju Rice:

    ½ cup rice, 2 riped red tomatoes, 2 tsp toor dal, 1 tbsp jaggery, 1 tsp oil, 3-4 sprigs of coriander leaves.

    Steps to make Tomato Gojju Rice:

    1. Finely chop the tomatoes.

    2. Wash the rice well.

    3. In a pressure pan, put one tsp oil. Once warm, add the tomatoes. Saute till they turn soft.

    4. Add jaggery and saute for another 2 mins.

    5. Add the rice and toor dal. Mix well.

    6. Add 1.5 cups water and pressure cook for 3 whistles.

    7. Once the steam cools down, garnish the tasty tomato gojju rice with coriander leaves.

    Enjoy this sweet-tangy delicious rice.
