Ingredients to make Vaingya Ambot:

½ cup brinjal cubes, 1 tbsp tamarind pulp, 1 tbsp grated coconut, 3/4 cup soaked toovar dal, ½ tsp turmeric powder, salt to taste, ½ cup chopped onions, 1 tbsp coriander powder, 1 tsp oil, 1 tsp mustard seeds, a pinch asafoetida, 1/4 cup thinly sliced onions

Steps to make Vaingya Ambot:

1. Dry roast the coconut on a medium flame for 2 minutes. Cool and blend. Keep aside.

2. Combine the toovar dal, turmeric powder, salt and 1¼ cups of water in a pressure cooker and cook for 3 whistles.

3. Add the chopped onions, brinjal and ¼ cup of water, and cook on a medium flame for 4 to 5 minutes, stirring occasionally.

4. Add the coconut, tamarind pulp, coriander powder, ½ cup of water and salt, and cook on medium heat for 2 minutes. Keep aside.

5. For the tempering, heat oil and add the mustard seeds. When the seeds crackle, add asafoetida and sliced onions and sauté for 2 minutes.

6. Add this tempering to the dal along with ¼ cup of water, mix well and cook on a medium flame for 1 minute. Serve hot.
