You need to ensure that you consume healthy food at every meal. This Vankaya Muddha Korra is not only scrumptious but is also loaded with nutrients like protein, carbohydrates, vitamin A, and potassium.

1/4 cup chawli soaked & drained, 2 cups chopped brinjal, ½ tsp turmeric powder, 1½ tbsp oil, 1 tsp mustard seeds, 1 tsp urad dal, 7-8 curry leaves, ½ tsp asafoetida, salt to taste, 1 tsp grated ginger
1. Combine the chawli, turmeric powder and 1 cup of water, and pressure cook for 1 whistle. Keep aside.
2. Combine the brinjal and 1½ cups of water, cover and cook on a medium flame till the brinjal is tender. Mash and keep aside.
3. Heat oil, add mustard seeds, urad dal, curry leaves and asafoetida, and sauté on a medium flame, till the dal turns light brown.
4. Add the brinjal, chawli, ginger and salt, cover and cook on low heat for 8-10 minutes. Serve hot.
