A simple, quick and tasty rice preparation, called Vegetable Rice is a perfect meal time food. Rice has carbohydrates along with veggies like carrot, peas and capsicum, which have vital vitamin and minerals, and this makes this food wholesome and awesome. Garnishing the rice with mint and coriander leaves, infuses more aroma into the flavourful basmati rice.
Contents
½ cup basmati rice, 5-10 peas1/2 carrot, ¼ potato, ¼ onion, ¼ capsicum, 3-4 sprigs of mint leaves, 3-4 coriander leaves, 1 tsp oil, 1 cup water
1. Wash rice well and soak the rice for 20 minutes.
2. In a pressure pan, put oil. Add finely chopped onion and capsicum. Saute for 2 minutes.
3. Add peas and finely chopped potato and carrot. Saute for 2-3 minutes.
4. Add water and give a good mix. Add salt too.
5. Add the soaked basmati rice.
6. Pressure cook for 2 whistles.
7. Once the steam gets cooled, spread the rice on a plate.
8. Garnsih with finely chopped coriander and mint leaves. Give a good mix.
Tasty Vegetable Rice is ready to be enjoyed.
