Veggie Corn Cricket Balls

A delicious and easy to prepare snack, Veggie Corn Cricket Balls is a perfect evening snack for your child. In this recipe, corn which is a good source of fibre, vitamin C, and magnesium is used. Boiled potatoes and cabbage are also added. Potatoes are a rich source of carbohydrates while cabbage provides vitamin C, K, and minerals like magnesium, iron, and calcium.

Ingredients to make Veggie Corn Cricket Balls:

4 boiled potatoes, 2 onions, 1 cup boiled sweet corn kernels, ¼ cup cabbage, 2 green chiles, ¼ cup coriander, ½ cup tomato ketchup, oil for deep frying, salt to taste

Steps to make Veggie Corn Cricket Balls:

1. Grate the boiled potatoes. Transfer the grated potatoes to a mixing bowl along with salt and give a good mix. Keep aside.

2. In a pan, put 2 tsp oil. Add finely chopped onions. Saute for 2 minutes. Add the shredded cabbage too and saute for 3-4 minutes.

3. Add corn, green chiles, coriander leaves, and mix very well. Allow the mixture to cool.

4. Make rounds of the potato and corn mixture in equal numbers.

5. Take one potato ball and flatten it. Fill the corn stuffing and seal the stuffed potato ball.

6. Repeat with all the potato balls.

7. Deep fry the Veggie Corn Cricket Balls till they turn crisp and golden brown.

Remove on an absorbent paper and serve hot with tomato ketchup. Enjoy this lip-smacking snack.
