    Ingredients to make Vellari Red Curry:

    4-5 fenugreek seeds dry roasted and powdered, 1 tbsp coconut oil or any other refined oil, 1 tsp mustard seeds, 1/4 tsp turmeric powder, 3 tbsp tamarind pulp, salt to taste, 2 cups chopped yellow cucumber

    Steps to make Vellari Red Curry:

    1. Heat oil and add the mustard seeds.

    2. When the seeds crackle, add the fenugreek powder, turmeric powder, tamarind pulp, salt and 1¼ cups of water, mix well, and simmer for a minute, stirring continuously.

    3. Add the yellow cucumber and simmer for another 10-12 minutes, till the cucumber is cooked. Serve hot.
