Vellarikka Pachadi is a very simple dish prepared with cucumber, coconut, and yogurt. It is very healthy to have and it has many nutrients like vitamin K, carbohydrates and dietary fiber.

    Ingredients to make Vellarika Pachadi:

    1 cup heaped cucumber, 3/4 cup curd, salt as needed, 1/3 cup grated coconut, 1/4 tsp dry grated coconut, 2 pearl onions, 2 tsp coconut oil, ½ tsp mustard seeds for seasoning, few curry leaves

    Steps to make Vellarika Pachadi:

    1. Peel the skin, discard the seeds and cut cucumber into cubes.

    2. Grind coconut, mustard seeds and pearl onion into a smooth paste adding little yogurt.

    3. Cook cucumber with little water adding salt and curry leaves until soft.

    4. Add the ground coconut paste, cook on low flame for 2-3 minutes and remove from heat.

    5. Once it cools a little, add curd and mix well. Heat coconut oil, add mustard seeds, when it splutters, add curry leaves and pour the seasoning over the kichadi.

    This is a healthy and tasty dish to serve.
