Encourage your child’s palate to gravitate naturally to light and healthier food. Watermelon Jelly will be a great refreshing treat during summers. Watermelon has many nutrients including vitamins and minerals.

2 cups strained watermelon juice, ¼ cup lemon juice, 3 cups sugar, 1/3 cup white balsamic or white wine vinegar, 2 tsp. liquid pectin
1. Heat watermelon juice, stir in sugar until dissolved, add vinegar, lemon juice and bring to a full rolling boil over high heat, stirring constantly.
2. Add pectin liquid and stir well and boil for a minute. Remove from heat and skim off the foam from a spoon. Ladle the mixture in moulds, jars and pudding dish. Let it cool down and set in the fridge.
Offer these jellies to keep your child hydrated after his playtime.
