A bowl of curd comes from milk and therefore, it is loaded with several essential nutrients like calcium, vitamin B-2, vitamin B-12, potassium, and magnesium. An advantage with curd is that it is light on the stomach and easier to digest than milk. Curd is a great probiotic (an ingredient that contains live bacteria). It prevents infection and boost our immunity. Whereas brinjal is rich in fiber, low in calories and provides a range of nutrients. The anthocyanins in brinjal may protect heart health. The fiber, potassium, vitamin C, vitamin B6, and phytonutrient content in brinjals all support heart health. White Bringal Majjige Huli is a delicious south Indian dish, which is very easy to cook.

Fresh curd-1 cup, white brinjal-2 medium, fresh mint leaves-few, water-1 cup, cumin powder-1/4 tsp, and salt-to taste
1. Cut and boil the white brinjal for 10 minutes.
2. In a saucepan, take water and add curd, cumin powder, salt, and boiled brinjal. Mix it well and boil.
3. As it boils, the gravy thickens. Stir for 1-2 minutes and switch off.
Garnish with mint leaves and serve hot.
