White Pumpkin Kheer

A sweet dish made using white pumpkin, khoya and milk called White Pumpkin Kheer, is a rich delicious preparation. It’s a perfect dessert for your child. White pumpkin is rich in vitamins and minerals like vitamin C, E and K and minerals like iron, calcium and phosphorus. Khoya is rich in fats while milk provides the vital calcium. Garnish this kheer with dry fruits and the kheer tastes awesome.

    Ingredients to make White Pumpkin Kheer:

    1 cup white pumpkin, 3 cups milk, 3 tbsp ghee, 1 tbsp dryfruits (cashews, almonds, pistas), 3 tbsp khoya, sugar as per taste

    Steps to make White Pumpkin Kheer:

    1. In a vessel, boil milk till it reduces to half and turns light cream colour.

    2. In another pan, add 1 tsp ghee and saute the crushed nuts for 2 minutes. Remove and keep aside.

    3. In a deep pan, add ghee and saute the grated white pumpkin for about 15 mins or till the raw smell goes off.

    4. Add the boiled milk, khoya and sugar and stir well. Cook on medium flame for about 10 mins. Garnish with sauted dry fruits.

    5. Remove and allow the kheer to cool.

    Refrigerate. Chilled and delicious White Pumpkin Kheer is ready for your child to devour and enjoy.
