Yam and Spinach Pulusu

Pulusu is a popular dish in Andhra Pradesh and is prepared by using vegetables in tamarind based curry. It has a unique flavor and aroma that will tantalize your taste buds.

    Ingredients to make Yam and Spinach Pulusu:

    2 cups yam (suran) cubes, 2 cups chopped spinach, salt to taste, pinch of turmeric powder, 2 tsp oil, ½ tsp mustard seeds, 1 tbsp tamarind pulp, 1/4 tsp fenugreek seeds, 1 whole dry Kashmiri red chilli, 6-8 curry leaves, 1 tsp roasted sesame seeds, 2 tsp raw rice.

    Steps to make Yam and Spinach Pulusu:

    1. Take a pan and add yam, 1½ cups of water, salt and turmeric powder to it.

    2. Cover with a lid and let it cook for 10 minutes.

    3. Now add spinach, tamarind pulp, raw rice, and a little salt. Mix well and then cook it on medium flame for 2 minutes.

    4. Heat oil in a pan and add mustard seeds and fenugreek seeds along with Kashmiri red chili, and curry leaves.

    5. Switch off the flame and add the tempering to the prepared yam curry along with roasted sesame seeds.

    Mix it well and serve hot with rice or roti.
