Prepare this lip-smaking Yam Curry and your will relish this forever. The Yam Curry is cooked in an epitome of spices and a tangy pulp of tamarind. This delicious recipe is full of nutrients from yam and peas.

2 tbsp mustard oil or ghee, 1 tsp cumin seeds, 1 large onion chopped, 2-3 garlic cloves minced, ½ tsp cayenne pepper, 250 gm yam sliced, 2 tomatoes chopped, ½ tsp mild curry powder, ½ tsp tamarind paste, ½ cup water, ½ cup frozen peas, coriander leaves for garnishing
1. Heat oil in a pan andadd mustard seeds and cumin seeds. Allow them to splutter.
2. Add garlic, chopped onion, cayenne pepper, and saute until onion turns golden brown.
3. Stir in tomatoes, yam, salt and curry powder. Mix tamarind paste with warm water and add to the pan.
4. Reduce heat, add water; cover and simmer for 20-25 minutes. Stir in between and cook until yam tenders.
5. Stir in peas and cook for another 4-5 minutes.
Garnish it with coriander leaves. Serve with roti and rice.
