Looking for something different to serve your little picky eater? How about serving him some delicious yam stir fry? Yams are rich in carbohydrates and Vitamin C.

Ingredients: 3.5 cup chopped elephant foot yam, ¼ teaspoon turmeric powder, 1.5 tablespoon oil, 1 teaspoon mustard seeds, 1 teaspoon urad dal, ½ teaspoon cumin seeds, 8 to 9 curry leaves, 3 to 4 tablespoon grated fresh coconut, 1 to 1.5 tablespoon chopped coriander leaves, a pinch of asafoetida, salt as required, enough water for pressure cooking or steaming the yam
Steps:
1. Pressure cook the yam with salt and turmeric for 5 to 6 whistles till the yam has completely cooked and softened. Drain and keep aside.
2. Heat oil and add mustard seeds and urad dal. Saute.
3. Add the cumin seeds, curry leaves and asafoetida. Saute for 2 minutes. Add the drained yam and stir.
4. Add the coconut and salt, saute for a few minutes. Garnish with coriander leaves and serve.
This dish goes beautifully with rotis or parathas. Cook some today!
