The popular South Indian Anna sambar is rich in nutrients like proteins, as it contains lots of vegetables, rice and lentils. The added tomato gives the touch of tanginess.

½ cup rice, 1/4th cup toor dal, 1 tbsp chana dal, 1 tbsp urad dal, 2-3 tomatoes, ½ cup peas, salt as per taste, ghee, mustard seeds, curry leaves
1. Wash rice and toor dal together and keep them with 4 cups of water in a pressure cooker.
2. Add chopped tomatoes and peas.
3. Heat ghee in a pan, add mustard seeds and curry leaves. When the seeds spluter and curry leaves turn crisp add chana dal and urad dal and saute it for a minute.
4. Pour this seasoning in the pressure cooker containing rice and dal and pressure cook for 4-5 whistles.
5. Once the pressure subsides, open the lid and mash the veggie chunks with a spoon.
Serve warm with ghee drizzled on top. You can use tamarind pulp to add the more tanginess in the same.
