Brinjal Sambhar is a healthy and tasty accomplice to rice, dosa or idli. Brinjal is rich in calcium, iron and vitamins B,C and K. Along with toor dal(good source of protein) and tomato(good source of Vitamin C), you can make the dish all the more nutritious. Topping with crushed pepper corns and curry leaves, both good source of vitamins, the dish is full of flavour.

½ cup toor dal, 1 brinjal( cut in quarters), 1 tomato(finely chopped), 1-2 pepper corns(crushed), 1-2 curry leaves(finely chopped), 1 tsp oil and salt as per taste.
1. Wash the toor dal well. Keep aside.
2. In a pressure cooker, add oil and saute the cut brinjal and tomato. Add the washed toor dal and salt.
3. Pressure cook for 3 whistles.
4. Once the pressure settles down, adjust the consistency (semi liquid) of the sambar by adding water. Let it boil.
5. Garnish with crushed pepper, corns and curry leaves. Mix well. Tasty yum brinjal sambar is ready!
You can serve this yummy Brinjal Sambhar to with rice and ¼ tsp ghee OR with idli, dosa.
