Carrot and Ginger Soup

Carrot and Ginger Soup is a perfect soothing drink for warming up in the winters for your kid. Carrots are a good source of several vitamins and minerals, especially vitamin A, K, B6, and potassium while ginger will boost the immunity.

    Ingredients to make Carrot and Ginger Soup:

    1 cup rinsed, peeled and chopped carrots, ½ tbsp chopped ginger, ¼ tsp. turmeric powder, ½ tsp. cayenne pepper powder, 2 slices of meal bread for croutons, ¼ cup soured cream, 4 cups vegetable stock, salt to taste, 1 tbsp butter

    For croutons:

    Toast bread pieces (in the shape of cubes) either in a frying pan or the oven until they are crisp and golden

    Steps to make Carrot and Ginger Soup:

    1. Melt butter in a saucepan and add ginger pieces and sauté for few minutes, add carrots and 1 cup of vegetable stock.

    2. Bring it boiling over high heat and reduce to low and cover and cook carrots until tender or for 12-15 minutes.

    3. Use a hand blender and blend the carrot mixture to smooth paste. Add salt, cayenne pepper and remaining stock and bring it to boil and simmer for 5 minutes.

    Serve your child the carrot and ginger soup topped with sour cream and croutons.
