Carrot methi parantha is an easy lunch box recipe. It is made from wheat flour and mild spices. It is nutritious and tasty. Carrot is rich in beta-carotene and fibre and a good source of healthy vitamins and minerals. Methi leaves are rich in vitamin A, C and folic. A mix of greens with carrots makes it a perfectly balanced diet.
1 cup wheat flour, 2-4 tbsp yoghurt, 2 tsp cumin seeds, 1/2 tsp carom seeds,1 /2 tsp turmeric, 1 -2 tsp chili powder, 1/2 tsp jeera dhania powder,1 cup finely chopped fenugreek leaves,1 cup grated carrot, 2 tbsp oil, salt to taste
1. In a bowl combine all the ingredients with the flour, add yogurt and knead into a smooth dough, add little water if required.
2. Add oil and knead it again and keep it covered for some time.
3. Make paranthas. Heat a skillet and put in the paratha, add oil, turn on both sides till done.
Serve hot with pickle or curds.
