Carrots are a rich source of Vitamin A, biotin, Vitamin K, dietary fibre, molybdenum, potassium, Vitamin C, Vitamin B6, manganese, Vitamin B3, Vitamin B1, pantothenic acid, copper, phosphorus, folate, Vitamin B2 and Vitamin E. Tomatoes have a high content of phosphorus, Vitamin E, niacin, folate, Vitamin B6, Vitamin A, dietary fibre, manganese, potassium and copper. Both vegetables are essential due to their high nutrition content and this dish provides all this nutrition in a tasty way.

Ingredients: ½ cup carrot chopped, 1 cup tomato chopped, 1 onion chopped, 4-5 garlic cloves chopped, 8-10 tulsi leaves, 3 tsp. sugar, salt to taste.
Steps:
1. Cook all the vegetables along with the garlic cloves and 3 cups of water in a pressure cooker till everything is soft and tender.
2. On cooling, add the tulsi leaves and pour the ingredients into a jar and blend into a smooth mixture.
3. Add salt and sugar and warm the soup. Strain to separate the liquid.
