Ingredients: Carcass and bones from one 4 pound roasted chicken, 4 cups low-sodium chicken broth, 2 medium carrots, 2 celery stalks, 1 medium onion, 1 bay leaf, ½ cup white rice, 2 tbsp chopped parsley.
Steps:
1. Take a large pot and place the bones and carcass from the leftover chicken. Add broth and 4 cups of water. Boil it over medium heat.
2. Reduce the flame and cook it for 20 minutes.
3. Next step is to remove the bones and carcass using a spoon. Add carrots, bay leaf, celery as well as onion. Cook the content until the vegetables are half cooked.
4. Add rice and cook it for 10 minutes.
5. Meanwhile, take the meat from the carcass and bones. Shred it into small pieces. When the rice is done, add the pieces to the broth and simmer the flame.
6. Season the content with ½ tsp salt.
