Chuda Santula is a delicious, amazing, and healthy breakfast option for your kid. Chuda is rich in iron and tastes best when cooked along with potato, onion, mustard seeds, roasted peanuts, curry leaves, and garnished with coriander leaves and grated coconuts.

1 cup poha (flattened rice), 1 chopped potato, 1 chopped onion, 1 tsp mustard-fenugreek-fennel-coriaander seeds, handful of peanuts, 1 string of curry leaves , grated coconut, 1/4 tsp chilli powder, 1 tbsp lemon juice, ½ tsp turmeric, 2 green chillies, sugar, oil
1. Wash chuda in colander, not letting it soak too long in the water. Leave in the colander to drain out completely. Sprinkle turmeric powder and salt over it. Mix well and keep it aside.
2. Now heat 1 tbsp oil in a kadhai and roast the peanuts. Once done, keep them aside.
3. Add 1 tbsp oil in the same kadhai and heat it. Add the mustard-fenugreek-fennel-coriander seeds, curry leaves and green chilli. Allow them to crackle.
4. Now add chopped potato and onion to it and fry till they turn golden brown. Add red chilli powder too.
5. Now add soaked chuda and mix well with other ingredients and allow it cook covered on low flame for 2-3 minutes. Turn off the flame.
6. Add lemon juice to it and mix well. Add fried peanuts.
Garnish the Chuda Santula with grated coconut and coriander leaves and serve it warm to your little one.
