Coconut Tomato Saru

Coconut Tomato Saru is a popular Karnataka dish prepared during winter season to comfort the chilly weather. This is a simple and flavoured dish and your sweetie pie will definitely love it. Coconut has calcium, magnesium, potassium, sodium and fiber while tomatoes are rich in iron, calcium, vitamins A, C and B6, protein, phosphorus, magnesium and potassium.

    Ingredients to make Coconut Tomato Saru:

    ½ cup fresh grated coconut, 3 cashews, water as required, 1 small sized onion, 2 medium size tomatoes, ½ tsp turmeric powder, ½ tsp. hing/asafoetida, 1 tbsp rasam powder, 1 tbsp ghee, ½ tsp mustard seeds, ½ tsp jeera/ cumin seeds, 5 curry leaves, 2 tsp chopped coriander leaves, salt to taste.

    Steps to make Coconut Tomato Saru:

    1. Boil ½ cup of water and add tomatoes and cook until the outer skin splits open.

    2. Once the tomatoes are cooled, chop and add them in a blender along with grated coconut, cashews.

    3. Make a smooth paste and keep it aside.

    4. Transfer this mixture into a vessel, pour water to the rasam consistency and add salt to taste and bring to boil add rasam powder and stir it well.

    5. Heat a tempering pan, add ghee, sauté mustard and cumin seeds to sputter, add asafoetida, curry leaves and coriander leaves and the chopped onions and sauté till the onions are transparent and add it to the boiling rasam.

    Prepare Coconut Tomato Saru today and mix it with cooked and mashed rice. Do not be surprised if your sweetie asks for a second serving.
