    Ingredients to make Cucumber and Carrot Curd Rice:

    1 cup grated cucumber, 1 cup grated carrot, 1.5 cup whisked curd, 3/4 cup cooked brown rice, salt to taste, oil, 1 tsp urad dal, 1 tsp mustard seeds, 1 chopped green chili, 1 tsp chopped ginger, a string of curry leaves

    Steps to make Cucumber and Carrot Curd Rice:

    1. heat oil in a pan; add mustard seeds, urad dal, ginger, curry leaves and green chillies. Stir fry them.

    2. Mix cucumber, carrot in dahi. Add rice and mix well.

    3. Pour the prepared tempering in rice mixture.

    4. Add salt and mix well.

    Serve cool or at normal temperature.
