This curry leaves powder is a great way to introduce curry leaves/kadi patta to your child. These are very flavorful leaves used in seasoning to our delicious side dishes. Apart from the flavor, these are a source of iron, calcium, fiber, and many more nutrients. It improves digestion as well.
Ingredients to make Curry Leaves Chutney Powder:
1.5 to 2 cups curry leaves, 1 cup chana dal, 1/4 cup urad dal, ½ cup dried coconut shredded, 20 to 25 dried red chiles, 3 tbsp jaggery, small lemon sized tamarind, 1.5 tsp salt, 2 tsp oil, 1 tsp mustard seeds, a pinch of asofetida
Steps to make Curry Leaves Chutney Powder:
1. Wash the curry leaves and dry it with the help of a kitchen towel.
2. Heat the pan on medium heat.Dry roast until slightly brown under medium flame.
3. Reduce the heat to low and dry roast the curry leaves until the leaves becomes super crispy
4. Heat the oil in a pan and add hing and mustard seeds. Let it splutter and then add red chiles. Roast them until the chiles becomes just warm.
5. Switch off the flame and add all other ingredients except jaggery. Mix it and allow it to cool
6. Once cooled, add jaggery and grind until you get coarse powder. Transfer it to a bowl. Mix it well
Store it in an air tight container once the powder gets cooled.
